This mini-loaf gluten-free cake with cream cheese frosting, is made fresh to order for your scheduled pickup or delivery date. It has a rich cream cheese frosting on top of a fresh carrot cake.
Cakes come in a foil pan that measures 6.25 x 3.5 x 2". They will easily feed 2-3 people, unless you LOVE cake, then only 1 person per pan. :) These are equivalent to approx. 3 cupcakes.
You may choose to add the following items to the cake, or leave it plain: nuts (walnuts or pecans), coconut, or pineapple. Please make your selection before checking out.
NOTE: Pickup days are Fridays 1 pm to 5 pm and Saturdays 9 am to 1 pm, ONLY!
Your order will be in a bag on the table on the front porch, clearly labeled with your name and order number. Please only take your bag(s). SMILE! You'll be on camera. :) If I have extra items for sale, they will also be on the table clearly labeled, including cost. If you'd like to purchase one of the extra items, you are welcome to leave cash in the box, or ring the door bell and I will bring the credit card machine out.
I will be making deliveries on Fridays and Saturdays outside of the pickup hours listed above. If you have specific instructions, such as a drop off location, or a preferred day or time, please list the info in the notes to seller box as you check out - also, please list any food allergies, just so I can be extra careful with those items as I prepare your goodies. Please include your name and order number on all email communication. Thank you!
Cake Ingredients:
Gluten-free flour: (Sweet White Rice Flour, Whole Grain Brown Rice Flour, Potato Starch, Whole Grain Sorghum Flour, Tapioca Flour, Xanthan Gum), OR, all-purpose flour, granulated sugar, organic brown sugar, vegetable oil, eggs, coconut (optional), pineapple (optional) pure vanilla extract, baking powder, baking soda, salt, cinnamon, buttermilk, carrots, walnuts (optional), pecans (optional).
Frosting Ingredients:
Cream cheese, unsalted butter, powdered (confectioner’s) sugar, pure vanilla extract, walnuts/pecans (optional).
I use Costco's brand of non-stick spray on the foil pans, which includes canola oil, soy lecithin, dimethyl silicone, propellant. Adds a dietarily insignificant amount of fat. Contains: SOY.
